Quarantine Fine Dining with Cotê
For New Yorkers who love fine dining, the experience of eating well during a pandemic seems like an impossible endeavor.
Here’s how I’ve curated a special dinner date at home with my boyfriend once a week. Not only will you be able to make something special together, but you’ll also support restaurants that are getting hit the hardest during the COVID-19 crisis.
Find local restaurants or markets that sell premium care packages or ingredients.
For our first week, we ordered a dry-aged steak package from Cotê, my favorite Korean barbecue spot. The cost was $180 for 4 steaks and an assortment of side dishes.
The chef prepared a guide on how to make the perfect steak, but I prefer reverse searing instead. I find it better than using a sous vide because it creates a beautiful, crispy crust in addition to keeping an even temperature throughout the steak.
Below are the steps:
Season your steak with salt and pepper. I prefer to remove the steak from the fridge at least 15 minutes I begin seasoning.
Preheat the oven to 250 degrees and put in your cast iron pan in the oven too.
Place your steak on a gridded roasting rack over a sheet pan.
Bake for 30 minutes, or until its internal temperature is about 90 degrees. Pull out your sheet pan and cast iron pan.
Add oil to your preheated cast iron pan. I prefer to use grapeseed oil since it has a higher smoke point.
Sear steak for 2 minutes on each side. The internal temperature should be around 130 degrees if you want it medium rare.
